SHIO KOJI is also known as “salt koji” in Japanese. It is a natural seasoning made by fermenting a mixture of salt, water, and rice koji. It’s widely known as a magical all-purpose seasoning that can be used to enhance the umami and richness in all kinds of foods!
This seasoning is vastly different from ordinary table salt as it has been fermented for a whole month, resulting in less saltiness yet still bringing savoury depth to foods!
Shio Koji is made by combining rice koji, salt and water that can be used as a substitute for salt and MSG.
Cooking methods:
- Marinate vegetables or as salad dressing. Brings out sweetness of vegetables.
- Natural substitute for salt & MSG.
- Marinate to tenderize and reduce gamy & fishy flavour of materials.
- Adds moisture to bread (salt replacement)
